Easy

Methi Pakora is a beloved Gujarati snack that brings together the aromatic flavors of fresh fenugreek leaves (methi) and the satisfying crunch of besan (gram flour). This deep-fried delight is a popular teatime treat across India, especially during the monsoon season when the craving for crispy snacks peaks. The slightly bitter taste of methi is beautifully balanced with spicy green chilies and earthy Indian spices, creating a snack that is both flavorful and deeply satisfying. Rooted in Gujarati cuisine, Methi Pakora is often prepared during festivals like Uttarayan (Makar Sankranti) and Diwali, making it a festive favorite in households across Gujarat. The pakora are typically served with tangy green chutney or sweet tamarind chutney, adding another layer of taste. This healthy version uses minimal oil and incorporates whole wheat atta for extra fiber, making it a guilt-free snack suitable for health-conscious individuals and those tracking their calories. Enjoy it as a warm snack with masala chai or as a side during lunch.

Ingredients(for 5-6 pakoras per serving)

  • 1 cup Fresh methi leaves (fenugreek) (finely chopped)
  • 3/4 cup Besan (gram flour)
  • 2 tbsp Whole wheat atta
  • 1 Green chili (finely chopped)
  • 1/2 inch Ginger (grated)
  • 1/4 tsp Turmeric powder (haldi)
  • 1/4 tsp Red chili powder (lal mirch)
  • 1/2 tsp Cumin seeds (jeera)
  • to taste Salt
  • 2 tbsp Oil (for binding + additional for shallow frying)
  • as needed Water (to make batter)

Instructions

  1. 1

Clean and finely chop the methi leaves. Wash thoroughly with water and pat dry to remove excess moisture.

    5 minutes

Drying methi well prevents excess moisture in pakora batter.

  2. 2

In a large mixing bowl, add besan, whole wheat atta, chopped methi, green chili, ginger, turmeric, red chili powder, cumin seeds, and salt. Mix well.

    3 minutes

Mix dry ingredients first for even flavor distribution.

  3. 3

Add 2 tablespoons of oil to the mixture for binding. Gradually add water, a little at a time, and mix to form a thick batter.

    4 minutes

Batter should be thick enough to hold shape when dropped, not runny.

  4. 4

Heat a tawa or shallow pan. Add just enough oil for shallow frying. Once hot, drop small spoonfuls of batter onto the pan.

    2 minutes

Shallow frying reduces calories compared to deep frying.

Why This Dish is Healthy

This version of Methi Pakora is healthy because it uses minimal oil through shallow frying, incorporates whole wheat atta for extra fiber, and leverages the nutritional benefits of methi leaves. Skipping deep frying reduces saturated fat, while besan adds protein and essential nutrients. It's a vegan, plant-based snack that fits into most healthy diets and is suitable for calorie-conscious eaters.

Methi Pakora is rich in dietary fiber, plant-based protein, and essential vitamins like vitamin C, iron, and folate from fresh methi leaves. The use of besan and whole wheat atta provides complex carbohydrates and keeps the glycemic index moderate. Fenugreek is known for its anti-inflammatory properties and helps regulate blood sugar levels.

Pro Tips

  • 💡Tip 1: Always use fresh methi for the best aroma and taste.
  • 💡Tip 2: Add a pinch of ajwain (carom seeds) for easier digestion.
  • 💡Tip 3: Do not overmix the batter; gentle mixing keeps pakoras light.

Storage & Serving

Store leftover pakoras in an airtight container at room temperature for up to 1 day. Reheat on a tawa to restore crispness. Avoid refrigeration as it makes them soggy.
