About Kabok
Manipuri sweet puffed-rice snack bound with jaggery, prepared during Cheiraoba and festivals.
How to Make Kabok (Traditional & Healthy Version)
Kabok is a beloved Bengali snack that holds a special place in the culinary traditions of West Bengal and neighboring regions. Made primarily from puffed rice (muri) and jaggery (gur), Kabok is a delightful treat enjoyed by families during tea-time or as a festive munching option. Its light, crispy texture combined with the natural sweetness of jaggery and the earthy notes of roasted nuts make it both wholesome and satisfying. In many Bengali households, Kabok is prepared during harvest festivals and often shared with friends and neighbors as a symbol of togetherness. What makes Kabok truly unique is its simplicity and versatility. The combination of locally sourced ingredients such as muri, gur, and peanuts (moongphali) not only captures the essence of Bengali cuisine but also ensures that the snack remains affordable and accessible to all. Its subtle crunch, combined with bursts of nutty flavor, makes Kabok an irresistible snack for both young and old. Whether enjoyed with a cup of chai or packed as a travel snack, Kabok stands out as a healthy, naturally sweetened alternative to processed snacks, reflecting the wisdom of traditional Indian kitchens.
Ingredients(for 1 cup Kabok (approx. 75g))
- 2 cups Muri (puffed rice) (fresh for best texture)
- 1/2 cup Gur (jaggery) (organic if possible)
- 1/4 cup Moongphali (peanuts) (roasted and unsalted)
- 2 tbsp Til (sesame seeds) (lightly toasted)
- 2 tbsp Narikol (grated coconut) (fresh or desiccated)
- 1 tsp Ghee (for greasing and enhanced flavor) - optional
- 1/4 tsp Elaichi (cardamom powder) (for aroma) - optional
- 2 tbsp Dry fruits (raisins, cashews) (chopped, optional) - optional
- a pinch Salt (to balance flavors) - optional
Instructions
- 1
Dry roast the muri (puffed rice) in a kadhai over medium flame for 2-3 minutes until crisp. Transfer to a large mixing bowl.
3 minutes
Ensure the muri is fresh and dry for best crunch.
- 2
Roast moongphali (peanuts) and til (sesame seeds) separately on low flame until lightly golden. Set aside.
5 minutes
Stir constantly to prevent burning.
- 3
In the same kadhai, add the gur (jaggery) with 2 tbsp water. Heat on low, stirring until the gur melts and forms a thick syrup (do not overboil).
5 minutes
Test syrup by dropping a bit in water; it should form a soft ball.
- 4
Add elaichi powder, salt, and ghee to the syrup. Mix in roasted peanuts, sesame, coconut, and dry fruits. Stir quickly.
2 minutes
Add ingredients while syrup is hot for even coating.
