Plain Buttermilk, known as Chaas in Hindi and Moru in Tamil, is a classic South Indian beverage cherished for its cooling properties and digestive benefits. Its subtle tang, gentle spice, and creamy mouthfeel make it an irresistible companion to any meal. Traditionally served as part of lunch in regions like Tamil Nadu, Karnataka, Andhra Pradesh, and Kerala, buttermilk is more than just a drink—it's an integral part of the Indian culinary tradition. It is often offered to guests as a welcome drink and is a must-have during festivals like Ugadi and Pongal when heavy festive foods are enjoyed. Light on the stomach and packed with flavor, plain buttermilk is an ideal way to stay hydrated, aid digestion, and balance the body’s heat, making it a great choice for health-conscious individuals and families alike.

Instructions

  1. 1

In a large mixing bowl, whisk the curd (dahi) until smooth and lump-free.

Add roasted cumin powder (bhuna jeera), salt, and a pinch of black pepper. Mix well.

    1 minute

Roast cumin seeds and grind fresh for maximum aroma.

  4. 4

Add grated ginger, chopped green chilli, curry leaves, and asafoetida (hing) if using. Stir to combine.
