Easy

Chhattisgarh Kanji is a refreshing and lightly fermented beverage native to the heart of East India, particularly Chhattisgarh. This drink, known locally as 'Kanji', is made by fermenting cooked rice with water and spices, resulting in a tangy, mildly sour, and probiotic-rich concoction. Historically, Kanji has been consumed in rural households during hot summer days and is especially popular during the harvest season, providing a cooling reprieve and aiding digestion. The taste of Chhattisgarh Kanji is delicately sour, lightly spiced, and has an earthy aroma thanks to the use of simple Indian spices like rai (mustard seeds) and hari mirch (green chili). As a low-calorie, vegetarian beverage, it fits perfectly into a health-conscious Indian diet. It’s enjoyed both as a digestive after a heavy meal or as a light drink during festivals like Hareli, symbolizing the agrarian roots of Chhattisgarh. With its regional authenticity and nutritional benefits, Chhattisgarh Kanji is an excellent choice for those seeking a traditional Indian beverage that’s both flavorful and mindful of caloric intake.

Ingredients(for 1 medium glass (200 ml))

  • 1/2 cup Cooked rice (Chawal)
  • 3 cups Water (Pani)
  • 1/2 tsp Mustard seeds (Rai)
  • 1/4 tsp Turmeric powder (Haldi)
  • 1 Green chili (Hari mirch, finely chopped) - optional
  • 1/2 tsp Salt (Namak, preferably rock salt)
  • 1/4 tsp Red chili powder (Lal mirch) - optional
  • 1 tbsp Coriander leaves (Dhania, finely chopped) - optional
  • 1 tsp Lemon juice (Nimbu ka ras) - optional

Instructions

  1. 1

Wash cooked chawal (rice) thoroughly and place it in a large bowl. Add 3 cups pani (water) and mix well, mashing the rice lightly to help release starch.

    5 minutes

Use leftover rice for a more authentic flavor.

  2. 2

Add rai (mustard seeds), haldi (turmeric powder), namak (salt), and finely chopped hari mirch (green chili). Stir the mixture thoroughly.

    3 minutes

Mustard seeds aid fermentation and enhance tanginess.

  3. 3

Cover the bowl with a muslin cloth and let it ferment at room temperature for 10-12 hours or overnight. In summer, 8 hours fermentation is enough.

    10 hours

Keep the bowl in a warm spot to speed up fermentation.

  4. 4

After fermentation, strain the kanji using a fine sieve to remove rice grains. Transfer the liquid to a jug.

    2 minutes

Use the leftover rice in other dishes like khichdi or upma.
