  • 2 medium (about 400g) Torai (Ridge gourd) (also called turai or tori)
  • 3 tbsp Besan (Gram flour) (roasted for better flavor)
  • 1 small, finely chopped Onion (pyaz) - optional
  • 1 tsp Ginger-garlic paste (adrak-lehsun paste)
  • 1, finely chopped Green chili (hari mirch) - optional
  • 1 tsp Coriander powder (dhaniya powder)
  • 1/2 tsp Cumin powder (jeera powder)
  • 1/2 tsp Red chili powder (lal mirch)
  • 1/4 tsp Turmeric powder (haldi)
  • 2 tbsp, chopped Fresh coriander leaves (hara dhaniya)
  • to taste Salt (namak)
  • 1 tbsp Mustard oil (sarson ka tel, or use cold-pressed oil)
  • 1 tsp Lemon juice (nimbu ras) - optional

Instructions

    Wash and peel the torai lightly, retaining some green skin for texture. Make a slit lengthwise in each torai, without cutting through completely. Carefully scoop out some inner flesh to make space for stuffing.

    In a tawa, dry roast besan on low flame until golden and aromatic. Transfer to a bowl.

    Keep stirring to prevent burning besan.

    To the roasted besan, add chopped onion, ginger-garlic paste, green chili, coriander powder, cumin powder, red chili powder, turmeric, salt, fresh coriander, and lemon juice. Mix well to form a crumbly stuffing.
