  • 1/2 cup Makka ke dane (Corn kernels) (unpopped)
  • 1 tablespoon Cold-pressed mustard oil (sarson ka tel, or use olive oil for milder taste)
  • 1/2 teaspoon Red chilli powder (lal mirch)
  • 1/4 teaspoon Turmeric powder (haldi)
  • 1 teaspoon Chaat masala (for tanginess)
  • 1/2 teaspoon Black salt (kala namak)
  • 1/2 teaspoon Roasted cumin powder (jeera powder)
  • 5-6 leaves Curry leaves (kadi patta, fresh) - optional
  • 1 small Green chilli (finely chopped, hari mirch) - optional
  • a pinch Asafoetida (hing, optional) - optional

Instructions

    Heat a heavy-bottomed kadhai or deep pan on medium flame and add the mustard oil. Allow it to heat until it’s slightly smoking, then reduce the flame.

    Swirl the oil around to coat the base for even popping.

    Add the makka ke dane (corn kernels) and cover with a lid. Shake the pan gently every 30 seconds to prevent burning and ensure even popping.

    Keep the lid slightly ajar for steam to escape and crispier popcorn.

    Once popping slows down, turn off the flame and transfer the popcorn immediately to a large mixing bowl.

    Don’t leave popcorn in the hot pan or it may burn.

    In the same pan, add curry leaves and green chilli (if using). Sauté for 30 seconds, then add red chilli powder, turmeric, roasted cumin powder, and a pinch of hing. Sauté on low flame for 30 seconds to bloom the spices.
