Rice with Bottle Gourd Curry, also known as 'Lauki ki Sabzi with Chawal', is a beloved North Indian lunch staple, celebrated for its lightness, subtle flavors, and wholesome nutrition. This dish is deeply rooted in Indian culinary traditions, especially in Uttar Pradesh, Haryana, and Punjab, where bottle gourd (lauki) is a prized summer vegetable. The curry features tender lauki simmered in a mildly spiced tomato gravy, served alongside steamed basmati rice, making it a comforting and satisfying meal for families. Lauki ki Sabzi is often prepared during festivals like Navratri, as it aligns with sattvic food practices and is easy on the digestive system. Its popularity stems from its simplicity and health benefits, making it a preferred choice for those seeking a nutritious vegetarian lunch. The dish’s subtle aroma, enhanced by traditional spices like jeera, haldi, and dhania powder, makes it both flavorful and gentle on the palate. Whether enjoyed as a weekday lunch or part of a festive thali, Rice with Bottle Gourd Curry promises a taste of authentic North Indian home cooking.

  • 1 medium (about 300g) Bottle gourd (लौकी, peeled and diced)
  • 2 medium Tomatoes (टमाटर, finely chopped)
  • 1 small Onion (प्याज, finely chopped)
  • 1 inch Ginger (अदरक, grated)
  • 1 Green chili (हरी मिर्च, slit)
  • 1/2 tsp Cumin seeds (जीरा)
  • 1/4 tsp Turmeric powder (हल्दी)
  • 1 tsp Coriander powder (धनिया पाउडर)
  • to taste Salt (नमक)
  • 1 tbsp Refined oil (any neutral oil like sunflower or mustard)
  • 2 tbsp Fresh coriander leaves (धनिया पत्तियां, chopped) - optional

Instructions

  1. 1

Wash and soak basmati rice for 10 minutes. Drain and cook in a saucepan with double the water until tender.

    10 minutes

Add a few drops of lemon juice to keep rice grains separate.

  2. 2

Heat oil in a kadhai. Add cumin seeds (jeera) and let them splutter.

    2 minutes

Use mustard oil for an authentic North Indian flavor, but ensure it's well-heated to reduce pungency.

  3. 3

Add chopped onion, sauté till golden. Add grated ginger and green chili; sauté for another minute.

    3 minutes

Don’t overcook onions—keep them soft for a lighter curry.

  4. 4

Add chopped tomatoes, turmeric, and coriander powder. Cook till tomatoes turn mushy and the masala is fragrant.

    4 minutes

Mash tomatoes with the back of a spoon for a smoother gravy.
