Ingredients(for 1 medium Puran Poli per serving)

  • 1 cup Whole wheat flour (atta) (Atta)
  • 1/2 cup Chana dal (Bengal gram) (Split Bengal gram)
  • 1/3 cup Jaggery (Gur)
  • 1/2 tsp Cardamom powder (Elaichi)
  • 1/4 tsp Nutmeg powder (Jaiphal)
  • 1/4 tsp Salt
  • 1/4 tsp Turmeric powder (Haldi)
  • 2 tbsp Oil (cold-pressed or coconut oil) (For dough and cooking)
  • as needed Water (For dough and cooking dal)

Instructions

  1. 1

Wash and soak chana dal for 4 hours. Drain and pressure cook with enough water till soft (about 3 whistles).

    10 minutes

Ensure dal is soft but not mushy for a perfect puran texture.

  2. 2

Drain cooked dal and mash. In a pan, combine mashed dal, jaggery, cardamom, nutmeg, and cook till mixture thickens and leaves sides.

    10 minutes

Cook on low flame and stir continuously to avoid sticking.

  3. 3

In a mixing bowl, combine atta, salt, turmeric, and 1 tbsp oil. Gradually add water to make a soft, pliable dough. Rest for 10 minutes.

    5 minutes

Cover the dough to keep it moist and soft.

  4. 4

Divide dough and puran (filling) into equal portions. Flatten dough balls, place puran in center, and seal edges to form a stuffed ball.

    5 minutes

Seal properly to prevent filling from leaking during rolling.

Why This Dish is Healthy

By replacing ghee with cold-pressed oil and using whole wheat flour, this recipe reduces saturated fat and increases fiber, making it suitable for calorie-conscious individuals. The natural sweetness from jaggery avoids blood sugar spikes associated with refined sugar. Vegan adaptation makes it cholesterol-free, and its high protein and fiber content make you feel fuller for longer, supporting weight management and sustained energy.

This vegan Puran Poli offers a rich source of plant-based protein from chana dal, complex carbohydrates from whole wheat atta, and minerals like iron, magnesium, and potassium. Jaggery provides natural sweetness along with trace minerals, making it healthier than refined sugar. The spices, cardamom and nutmeg, aid digestion and enhance flavor without adding calories. The use of minimal oil and whole ingredients ensures lower saturated fat and higher fiber content, supporting heart health and digestive wellness.
