How to Make Mix Roti (Traditional & Healthy Version)
Mix Roti is a wholesome Indian flatbread beloved across North India for its hearty texture, robust nutrition, and earthy flavors. Traditionally prepared using a blend of whole grains and flours such as wheat (atta), bajra (pearl millet), and besan (gram flour), Mix Roti is a staple in Punjabi, Rajasthani, and Haryanvi households. Each region has its own twist, often incorporating seasonal vegetables, fresh herbs, and spices to enhance both nutrition and taste. This flatbread is perfect for lunch, especially when served with dal, sabzi, or fresh homemade dahi (curd). Its rustic appeal and satisfying bite make it a favorite during festivals like Makar Sankranti and Lohri, where nourishing meals are celebrated. With its combination of grains, Mix Roti is an excellent choice for those seeking a nutrient-dense, high-fiber meal that energizes and sustains throughout the day. The use of whole grains and minimal oil ensures this roti remains light yet filling—a true testament to the wisdom of Indian home cooking.
Ingredients(for 2 medium rotis per person)
- 1/2 cup Whole wheat flour (atta) (gehun ka atta)
- 1/4 cup Bajra flour (pearl millet flour)
- 2 tbsp Besan (gram flour)
- 1/4 cup Chopped spinach (palak)
- 2 tbsp Chopped coriander leaves (dhaniya patta)
- 2 tbsp Finely chopped onion (pyaaz) - optional
- 1 Green chili (finely chopped, hari mirch) - optional
- 1/2 tsp Carom seeds (ajwain)
- to taste Salt (namak)
- as needed Water (to knead dough)
- 1 tsp Oil or ghee (for cooking, use minimal for health)
Instructions
- 1
In a large parat (mixing bowl), combine atta, bajra flour, besan, spinach, coriander, onion, green chili, ajwain, and salt.
3 minutes
Mix dry ingredients thoroughly to distribute flavors evenly.
- 2
Gradually add water and knead into a soft, pliable dough. Rest covered for 10 minutes.
10 minutes
Do not overwork the dough; resting helps gluten relax for softer rotis.
- 3
Divide the dough into 4 equal portions. Roll each portion into a smooth ball.
2 minutes
Keep balls covered with a damp cloth to prevent drying.
- 4
Dust each ball with dry flour and roll into a 6-inch circle using a belan (rolling pin).
3 minutes
Roll gently for even thickness and to avoid tearing.
