  • 1 medium, finely chopped Onion (pyaaz)
  • 1 medium, finely chopped Tomato (tamatar)
  • 1-2, finely chopped Green Chillies (hari mirch) - optional
  • 3-4 cloves, minced Garlic (lehsun)
  • 2 tbsp, chopped Coriander Leaves (dhaniya patta)
  • 1 tsp Mustard Oil (sarson ka tel (optional, for authentic flavor)) - optional
  • 1/2 tsp Cumin Seeds (jeera)
  • 1/2 tsp Red Chilli Powder (lal mirch powder) - optional
  • 1/4 tsp Turmeric Powder (haldi powder)

Instructions

    Roast the brinjal on an open flame or tawa until the skin is charred and the inside becomes soft. Let it cool, peel off the skin, and mash well.
