Dudhi Thepla is a wholesome flatbread from Gujarat, celebrated for its vibrant flavors and nourishing ingredients. Its ability to stay fresh for hours makes it ideal for travel and long journeys across India. Ingredients(for 2 theplas per serving)

  • 1 cup Whole wheat atta (gehun ka atta)
  • 1 cup Dudhi (bottle gourd) (peeled and grated)
  • 2 tbsp Fresh coriander leaves (finely chopped)
  • 1 Green chili (finely chopped)
  • 1 tsp Ginger (grated (adrak))
  • 1/2 tsp Cumin seeds (jeera)
  • 1/4 tsp Turmeric powder (haldi)
  • 1/2 tsp Red chili powder (lal mirch)
  • 2 tbsp Yogurt (dahi, can use vegan yogurt)
  • to taste Salt
  • 1 tsp Sesame seeds (til) - optional
  • 2 tsp Oil (preferably peanut or sunflower)

Instructions

  1. 1

Peel and grate the dudhi (bottle gourd). Squeeze out excess water and retain it separately.

    3 minutes

Use the squeezed water later to knead the dough for extra flavor and nutrition.

  2. 2

In a large bowl, combine whole wheat atta, grated dudhi, coriander leaves, green chili, ginger, cumin seeds, turmeric powder, red chili powder, sesame seeds (if using), salt, and yogurt.

    4 minutes

Mix all spices and greens well to evenly distribute flavors.

  3. 3

Gradually add the reserved dudhi water and knead into a soft, pliable dough. Add a teaspoon of oil at the end to make the dough smooth.

    3 minutes

Do not add excess water; dudhi releases moisture as you knead.

  4. 4

Divide the dough into equal-sized balls. Dust each ball with dry atta and roll into thin, round theplas using a rolling pin (belan).

    4 minutes

Roll gently to avoid tearing, and keep thickness even for uniform cooking.

Why This Dish is Healthy
