How to Make Dark Chocolate Fudge (Traditional & Healthy Version)
Dark Chocolate Fudge, known locally as 'chocolate barfi', is a beloved sweet treat that has found its place in modern Indian mithai collections. While fudge is not rooted in ancient Indian culinary traditions, Indians have embraced its rich, decadent texture by incorporating local ingredients and flavors. Made with high-quality dark chocolate, paneer (homemade chhena), and a touch of jaggery, this healthy version offers an indulgent dessert without the guilt. The deep, bittersweet notes of dark chocolate beautifully complement the creaminess of paneer, creating a melt-in-the-mouth experience. In India, chocolate fudge is increasingly featured in festive platters during Diwali, Raksha Bandhan, and even Holi, where traditional sweets are modernized for younger generations. The recipe uses minimal sugar, replacing it with jaggery for a lower glycemic index, and adds nuts for crunch and nutrition. This fudge is vegetarian, easy to make, and perfect for lunchboxes, celebrations, or as a sweet treat after meals. Its adaptability allows it to suit various dietary needs, making it a popular choice across Indian households.

Keep the flame low to prevent chocolate from burning.
- 3

3 minutes
Strain jaggery if there are lumps for a smooth texture.
- 4
Mash paneer until smooth and creamy. Add to the chocolate-jaggery mix, stirring well to avoid lumps.
