How to Make Chocolate Kulfi (Traditional & Healthy Version)
Chocolate Kulfi is a delightful fusion of traditional North Indian kulfi and the universally loved taste of chocolate. Kulfi, often called Indian ice cream, has been a cherished dessert for centuries, especially during the scorching summers and festive occasions like Holi and Raksha Bandhan. This creamy, dense indulgence is typically slow-cooked with full-fat milk and flavored with cardamom (elaichi), saffron (kesar), and nuts. Our health-conscious version uses toned milk, dark cocoa, and minimal sugar, making it a guilt-free treat. The rich, chocolatey twist adds a modern, irresistible flavor while staying true to the Indian kulfi tradition. Served in matka (earthen pots) or kulhads, Chocolate Kulfi brings together nostalgia and innovation, making it a perfect centerpiece for family lunches, celebrations, or as a sweet ending to a hearty Indian meal. Its smooth texture, combined with the subtle crunch of nuts, makes it truly unforgettable.
Ingredients(for 1 medium kulfi (approx. 100 ml per serving))
- 2 cups Toned milk (doodh)
- 2 tablespoons Unsweetened cocoa powder (dark cocoa preferred)
- 2 tablespoons Jaggery powder (gur, can use brown sugar)
- 1 tablespoon Cornflour (makai ka atta)
- 1 tablespoon Chopped almonds (badam) - optional
- 1 tablespoon Chopped pistachios (pista) - optional
- 1/4 teaspoon Cardamom powder (elaichi) - optional
- 2 tablespoons Low-fat cream (malai) - optional
- 1 tablespoon Chopped dark chocolate (60% or above)
- 4-5 Saffron strands (kesar, for garnish) - optional
Instructions
- 1
Add toned milk to a heavy-bottomed pan (kadhai) and bring to a gentle boil over medium flame. Stir frequently to prevent sticking.
5 minutes
Use a thick kadhai for even heating and to avoid burning.
- 2
In a small bowl, mix cornflour with 2 tablespoons of cold milk to make a smooth slurry. Add this to the boiling milk and stir continuously to avoid lumps.
3 minutes
Always add cornflour slurry gradually while stirring to ensure smoothness.
- 3
Add unsweetened cocoa powder and chopped dark chocolate to the milk mixture. Mix well until fully dissolved and the milk turns chocolatey.
4 minutes
Sift cocoa powder to prevent lumps and ensure a silky texture.
- 4
Lower the flame. Add jaggery powder, cardamom powder, and low-fat cream. Mix until the mixture thickens and reduces to about half. Stir in chopped almonds and pistachios.
6 minutes
Do not overcook after adding jaggery to prevent caramelization.
