Bharwan Tomato, also known as stuffed tomato, is a beloved North Indian vegetarian dish, showcasing the vibrant flavors and culinary heritage of the region. Often served at festive luncheons and special occasions, Bharwan Tomato combines ripe, juicy tomatoes with a flavorful stuffing made of paneer, spices, and herbs. The dish is visually stunning, with the bright red tomatoes contrasting beautifully against the aromatic filling, making it a centerpiece for any meal. Originating from the heartlands of Punjab and Uttar Pradesh, Bharwan Tomato is a popular choice during festivals like Holi and Diwali, where rich but health-conscious foods are appreciated. Its taste is a delightful balance of tangy tomato, creamy paneer, and earthy spices like dhania (coriander) and jeera (cumin), making it a favorite among both adults and children. Bharwan Tomato is best enjoyed with roti, paratha, or steamed rice, and fits seamlessly into a healthy Indian lunch menu. This recipe retains the authentic flavors while focusing on a health-conscious approach, using minimal oil and high-protein paneer for a nutritious twist. Ingredients(for 2 medium stuffed tomatoes per person)

  • 4 Medium ripe tomatoes (Tamatar)
  • 1 cup Paneer (Homemade or store-bought, crumbled)
  • 1/4 cup Onion (Finely chopped, pyaz)
  • 1 Green chillies (Finely chopped, hari mirch)
  • 2 tbsp Fresh coriander leaves (Dhania, chopped)
  • 1/4 tsp Garam masala
  • 1/2 tsp Cumin powder (Jeera powder)
  • 1/4 tsp Turmeric powder (Haldi)
  • 1/4 tsp Red chilli powder (Lal mirch) - optional
  • to taste Salt (Namak)
  • 1 tbsp Oil (Preferably mustard oil (sarson ka tel))

Instructions

  1. 1

Wash the tomatoes thoroughly. Slice off the tops and gently scoop out the pulp, creating a cavity for stuffing. Reserve the pulp.

    5 minutes

Use a small spoon for easier scooping without tearing the tomato skin.

  2. 2

Heat oil in a tawa or non-stick pan. Add chopped onion and green chillies, sauté until golden brown.

    3 minutes

Low flame prevents burning and ensures even cooking.

  3. 3

Add the reserved tomato pulp and cook until moisture evaporates. Mix in crumbled paneer, salt, turmeric, cumin powder, garam masala, and red chilli powder. Stir well.

    5 minutes

Breaking paneer into small pieces ensures uniform stuffing.

  4. 4

Add chopped fresh coriander leaves and give a final stir. Remove from heat and allow the stuffing to cool slightly.

    2 minutes

Cooling prevents tomatoes from getting soggy during baking.
