  • 1 large (about 400g) Baingan (Eggplant/Brinjal) (also called 'brinjal' or 'aubergine' in India)
  • 1 medium (finely chopped) Onion (pyaaz)
  • 1 large (finely chopped) Tomato (tamatar)
  • 1-2 (finely chopped) Green Chillies (hari mirch) - optional
  • 2 tbsp (chopped) Fresh Coriander Leaves (dhaniya)
  • 3 cloves (crushed) Garlic (lehsun)
  • 1 tsp (grated) Ginger (adrak)
  • 1/2 tsp Cumin Seeds (jeera)
  • 1/4 tsp Turmeric Powder (haldi)
  • 1/2 tsp Red Chilli Powder (lal mirch) - optional
  • to taste Salt (namak)
  • 1 tbsp Mustard Oil (sarson ka tel)
  • 1 cup Whole Wheat Atta (for roti)
  • as needed Water (for kneading atta)

Instructions

    Wash and pat dry the baingan. Pierce it with a fork and roast directly on gas flame or in an oven until the skin is charred and the flesh is soft.
