  • 1 tbsp Raisins (kishmish) - optional
  • a pinch Salt (enhances flavor) - optional

Instructions

  1. 1

Dry roast pumpkin seeds in a heavy-bottomed kadhai on low heat until they start to pop and turn slightly golden. Remove and let them cool.

    5 minutes

Keep stirring to avoid burning and ensure even roasting.

  2. 2

In the same kadhai, add 1 tsp ghee. Add chopped dates and sauté until they become soft and mushy.

    4 minutes

Use a spatula to mash the dates for even texture.

  3. 3

Add grated jaggery to the dates and cook on low flame until the jaggery melts and blends well.

    3 minutes

Do not overcook jaggery; remove from heat as soon as it melts.

  4. 4

Add roasted pumpkin seeds, desiccated coconut, cardamom powder, chopped almonds, raisins, and a pinch of salt. Mix everything until well combined.

    3 minutes

Switch off the flame before adding nuts and coconut to retain their crunch.
