- 1 tablespoon Raisins (kishmish)
- 1/2 teaspoon Green cardamom powder (elaichi)
- 2-3 tablespoons Jaggery powder (gur) (or use coconut sugar)
- 2 tablespoons Skimmed khoya (optional) (for richness)
- 1 tablespoon Pistachios (pista) (chopped, for garnish)
Step-by-step instructions
Step 1 · Wash and peel the carrots
Wash and peel the carrots. Grate them finely using a traditional kaddukas (grater).
Step 2 · Heat desi ghee in a heavy-bottomed kadhai
Heat desi ghee in a heavy-bottomed kadhai. Add grated carrots and sauté on medium flame till they soften and release a sweet aroma.
Step 3 · Pour in the toned milk
Pour in the toned milk. Cook on low-medium flame, stirring occasionally, until the milk reduces and is absorbed by the carrots.
Step 4 · Add jaggery powder and mix well until it dissolves

Step 5 · Mix in cardamom powder
Mix in cardamom powder, chopped almonds, cashews, and raisins. Stir to combine and cook for another 2 minutes.
Step 6 · If using

Step 7 · Switch off the flame
Switch off the flame. Garnish with pistachios before serving. Serve warm or chilled as per preference.
