  • 2 tbsp Lemon juice (nimbu ras)
  • 1/2 cup Water (pani)
  • 1/4 tsp Rock salt (sendha namak) - optional
  • 1/4 tsp Black pepper powder (kali mirch) - optional
  • 5-6 Mint leaves (pudina) - optional
  • 1/2 inch piece, grated Ginger (adrak) - optional
  • 1/4 tsp Cumin powder (jeera powder) - optional
  • 1 tsp Honey (shahad, for mild sweetness (optional)) - optional

Instructions

    Heat the milk in a heavy-bottomed pan on medium flame until it just comes to a boil. Stir occasionally to prevent sticking.

    Always use fresh, full-fat milk for best results.

    Once the milk boils, reduce the heat to low. Add lemon juice gradually while stirring continuously until the milk curdles and separates into paneer and whey.

    You can substitute vinegar for lemon juice if needed.
