- 1 inch Ginger (grated, adrak)
- 1 tsp Cumin seeds (jeera)
- 1/2 tsp Turmeric powder (haldi)
- 1/2 tsp Red chili powder (lal mirch) - optional
- 1 tsp Coriander powder (dhania powder)
- 1/2 tsp Amchur powder (dry mango powder) - optional
- to taste Salt (namak)
- 1 tbsp Mustard oil (sarson ka tel (or any neutral oil))

Wash the watermelon peel thoroughly. Remove the hard green outer skin and retain the white inner rind. Chop it finely.
