- 2 tablespoons Black tea leaves (chai patti) (Darjeeling or Assam preferred)
- 1 litre Water (filtered)
- 1/4 cup Jaggery (gur) (unrefined, powdered)
- 1/2 cup Starter kombucha (unflavored) (from previous batch or store-bought)
- 1 piece SCOBY (Symbiotic Culture of Bacteria and Yeast) (essential for fermentation)
- 1 inch Fresh ginger (adrak) (sliced) - optional
- 5-6 leaves Tulsi leaves (Indian holy basil) - optional
- 1 tablespoon Lemon juice (freshly squeezed) - optional
- a pinch Rock salt (sendha namak) (for flavor) - optional
- 4-5 leaves Mint leaves (pudina) (for garnish) - optional
Instructions

Boil 1 litre of filtered water in a stainless steel vessel. Add black tea leaves and allow to simmer for 3-4 minutes to extract full flavor.

Strain out the tea leaves and immediately stir in the jaggery until fully dissolved. Allow the sweetened tea to cool completely to room temperature.
